Food for the Soul and Body
I'm not a very good cook. I know how to cook "home cooking", food for supper. I'm not creative or imaginative in the kitchen. I cook the things that for me are tried and true. Spaghetti, a roast and potatoes, meatloaf ... you get the picture.
This year I have challenged myself to make new dishes and to be more adventurous in my cooking and baking.
I just made the Viral Asian Carrot Salad and I am addicted!
This salad is fresh, delicious and gets better and better as it marinates.
As this salad recipe is presently "viral" on social media there are a lot of recipes. I chose the simplest recipe with the least amount of ingredients.
- 4 large carrots
- 1 shallot, finely diced
- 1 Tablespoon toasted sesame oil
- 2 Tablespoons soy sauce
- 1 Tablespoon rice vinegar
- 1 small lemon, zest and juice of
- 1 Tablespoon toasted sesame seeds
- 2-3 Tablespoons chopped fresh cilantro
Speaking of home cooking ... my youngest asked me how to make fried potatoes. So, believe it or I made a video tutorial for him and text messaged it to him.
